Add this nutritional powerhouse to your menu with this favorite kale salad recipe
Kale is one of the healthiest greens you can eat. Kale is rich in everything from B-vitamins and carotenoids to a host of anti-aging and beautifying trace minerals. Helps boost brain power and prevent memory loss. Helps to prevent eye diseases and strengthen bones, nails, hair, teeth and skin.
Its mild, non-bitter flavor also makes it one of the most palatable. Plus, you can eat it cooked or raw — as long as it’s very finely chopped.
A great way to eat it is in a salad with feta and dried cranberries.
1. Using one pound of kale, trim away and discard the tough center ribs and stalks.
2. Finely slice the leaves crosswise into thin ribbons.
3. In a separate bowl, whisk together:
ü two tablespoons of minced red onions
ü one and a half tablespoons of lemon juice
ü one teaspoon of honey
ü a quarter teaspoon of salt
ü a quarter teaspoon of black pepper
ü and a quarter cup of extra-virgin olive oil
4. Pour enough of the dressing over the kale to coat it well, and stir in two ounces of crumbled feta.
5. Garnish with dried cranberries and toasted walnuts.
